4 tea. margarine
4 cups sliced zucchini
2 small apples thin sliced
½ cup thin sliced onion
¼ tea. salt
Heat margarine in skillet until bubbly. Add zucchini. Sauté until crisp tender, about 4 minutes. Add remaining ingredients. Cover and cook just until apple softens slightly, about 5 minutes more.
I copied this recipe from a diet cookbook but I didn’t copy the nutritional information. You could substitute oil for the margarine and it would be vegan. No matter how you categorize it, it’s tasty!
