Pork Chop Dinner

This too came from the BH&G Good Food on a Budget Book.

Pork Chop Dinner

3 cups of uncooked noodles

1 (16 oz.) can tomatoes

1 teaspoon salt

6 pork rib chops, cut 1/2 inch thick

1/2 cup chopped onion

1 beef bouillon cube

1/2 teaspoon dried thyme leaves

dash pepper

Cook noodles in boiling water just until tender; drain. Drain tomatoes, reserving 3/4 cup juice. Quarter tomatoes; stir into noodles along with 1/2 teaspoon of salt. Place noodles in baking dish. Trim fat from chops. In skillet cook trimmings until 2 tablespoons of fat accumulate. discard trimmings. Brown the chops in hot fat. arrange chops over noodles, sprinkle with onions.

In a saucepan combine reserved tomato juice, bouillon cube, remaining salt, thyme and pepper. Cook and stir until bouillon is dissolved; pour over chops. Cover; bake at 350 until chops are tender about 1 1/4 hours. Makes 6 servings.

This would have been even better if I hadn’t over cooked the noodles.

Come back Monday to see how I satisfied my sweet tooth.
