I just had to retire my white slacks. As a fashionista (NOT) I only wear my white pants in the spring and summer. I dug them out of the back of the closet to wear last Sunday and I could not button them. That being said I should really watch the sweets but I have a sweet tooth that compels me to eat cookies (and other goodies).
In April I made a batch of bread pudding with eggs from my sisters chickens and day old bread from work. Its not low calorie but it is frugal.
Pioneer Bread Pudding
2 cups bread cubes
2 cups milk
3 tablespoons butter
1/4 cup sugar
2 eggs
dash salt
1/2 teaspoon vanilla
Place bread cubes in baking dish. Scald milk with butter and sugar. Beat eggs slightly add salt; then stir in the warm milk and vanilla. Pour over bread.
Set baking dish in a pan containing warm water up to the level of the pudding. Bake at 350 for 1 hour or until knife inserted in the center comes out clean. Makes 4-6 servings.
My mother made this pudding regularly while I was growing up. I especially like it with raisins added.
